Judy’s Baked Oatmeal Recipe


Baked oatmeal

Judy’s Fantastic Baked Oatmeal Recipe!

Preheat oven to 350*.  Grease 9×13 pan.
In a large bowl mix:

2 cups brown sugar
1 cup real melted butter
2 cups milk
6 eggs beaten eggs
1 tsp. vanilla
1/2 tsp. almond extract(not almond flavoring)

In a seperate bowl mix:

6 cups oatmeal
1 tsp. salt
1 Tblsp. baking powder
1 tsp. cinnamon
1/4 tsp. nutmeg
Pour into liquid mixture. Mix well.

Add:
2 cups fresh or canned tart cherries with juice.  1/8 or so cup of juice that comes with the cherries.  Depending how much juice–just toss in a little bit more oatmeal.
Pour into greased 9×13 pan.  Bake at 350* for 30+ minutes, center will be a bit gooey yet.  Will set up as it cools.
Serve warm in a bowl with milk (if desired), but tastes great cold too!
