8 oz Dried rice noodles (maifun, or chinese rice noodles)
2 T Vegetable oil
1 clove Garlic, minced
1 T Soy sauce
½ T Chili sauce
Salt and pepper to taste
1 Green onion, chopped


1. Bring a large pot of water to a boil. Add rice noodles, and cook for 4 to 5 minutes or until al dente; drain.

2. Heat oil in a large skillet over medium heat. Sauté garlic until tender.

3. Stir in noodles, and season with soy sauce, chili sauce, salt and pepper. Sprinkle top with chopped green onion.

Optional toppings:
chopped cucumber (served cold) with lime
chopped tomato (served cold) with cilantro
chicken cooked in garlic
