Tuna and Red Pepper Pasta Salad


2 c. uncooked small seashell pasta
1 c. finely chopped red bell pepper
1/2 c. chopped fresh parsley
1/2 c. finely chopped red onion
1/2 c. finely chopped celery
1 (6 oz) can solid white tuna in water, drained
1/3 c. fresh lemon juice
2 tbsp. extavirgin olive oil
2 tbsp. capers
1/2 tsp. salt
1 garlic clove, minced/crushed
1/4 tsp. freshly ground black pepper


1: Cook pasta according to package direction; omitting salt and fat.
Drain and rinse with cold water; drain.

2: Combine pasta, bell pepper, parsley, onion, celery, and tuna in a
large bowl, tossing gently to combine.

3: Combine lemon juice and remaining ingredients in a small bowl,
stirring with a whisk. Drizzle over past mixture; toss gently to coat.

Serves 4 (1 1/4 c. servings)
