Chocolate Covered Cherry Cookies - Cookie Contest 2002 Runner Up
These cookies were a hit with our judges.
1 1/2 c All Purpose Flour
1/2 c Unsweetened cocoa powder
1/4 tsp Salt
1/4 tsp Baking Powder
1/4 tsp Baking Soda
1/2 c Butter or margarine, softened
1 c Granulated sugar
1 1/2 tsp vanilla
1 - 10 oz Jar of Marchino Cherries
1 6 ox pkg Semisweet chocolate chips
1/2 c Sweetened Condensed Milk
In large bowl mix flour, cocoa, salt, baking powder and baking soda. In mixing bowl, beat together butter and sugar on low until fluffy. Add egg and vanilla, beat well.
Gradually add dry ingredients to creamed mix; beat until well blended. Shape dough into 1" balls; place on ungreased cookie sheet. Press down center of douigh with thumb. Drain cherries, reserve juice. Place cherry in the center of each chookie.
In small sauce pan combine chocolate pieces and sweetened milk; heat until chocolate is melted. Stir in 4 tsp cherry juice. Spoon about 1 tsp frosting over each cherry, covering thoroughly.
Bake at 350 degrees about 10 minutes. Remove to wire rack to cool. Makes 4 dozen.
