Welcome to a new school year! Thanks to Robin for sharing this fun breakfast recipe! It's a great way to start the day as your kids get used to a new routine this week.
Robin's Blueberry Coffee Cake
3/4 cup sugar
1/4 cup butter
1 egg
1/2 cup milk or 1/2 cup sour cream (I used sour cream)
2 cups flour
2 tsp. baking powder
1/4 tsp salt
2 cups blueberries
Topping:
1/2 cup sugar
1/3 cup flour
1/2 tsp cinnamon
1/4 cup butter
confectioner's sugar glaze
Preaheat oven to 357 degrees. Grease a 9x13" pan or 2 - 8" round pans. Mix the sugar, butter, egg and milk. Sift together flour, baking powder and salt; stir well into mixture. Fold in blueberries. Spread in pan. Combine ingredients for topping. Sprinkle over batter. Bake 50 minutes. Drizzle with confectioners' sugar glaze, if desired.
