Sesame Green Beans

A new twist on an ordinary vegetable. Give your green beans a fresh taste.

Ingredients:

4 lb. green beans
3 T. peanut oil
1 clove garlic, crushed
2 T. sesame seeds
Pepper

Instructions:

Wash the beans and trim to a uniform length. Steam lightly over a small amount of water until barely cooked and still crisp, then run under cold water to prevent further cooking. Drain. In a heavy skillet, heat and oil, then add the garlic and red pepper. Toss in the drained green beans and stir-fry for 1 minute. Sprinkle with sesame seeds and cook over high heat a few seconds longer. Remove from the heat. Discard the garlic. Add a generous grinding of pepper and toss. Serve warm.
